Gajarela/ Gajar ka halwa

Yummy Indian carrot dessert, relished in winters. 

 

Ingredients:

  1. 1 kg carrots grated
  2. 1 litre milk
  3. 1/4 tsp green cardamom powder 
  4. 1/2 tbsp ghee
  5. 6 to 7 tbsp condensed milk / 100 gms khoya according to preference 
  6. 25 gms cashew chopped finely 
  7. 25 gms raisins washed well
  8. 250 gms sugar

Method :

  1. In a heavy based Kadhai,add grated Carrots,milk,cardamoms powder and condensed milk.
  2. Cook them all together,till the carrots absorb the milk.
  3. Add ghee in the Kadhai and mix well.
  4. In a separate pan add ghee and sauté cashews and raisins. Mix well and serve hot.
