Savan is the month of monsoon. Festival of Teej is celebrated in savan. A good monsoon means good crops and Punjab is a state where agriculture is the main occupation. Women celebrate Savan by applying Henna on their palms and wearing glass bangles. Young girls in villages like to put up swings on trees called the ‘Pinghs’ and love to sing and dance. Kheer Pudas are made during this month to celebrate Savan as it is considered as a good Shagun.

The puda recipe is dedicated to our chachiji(Dr. Rameshinder Kaur Bal) as it is her recipe, rather she was the one who suggested that as it is the month of Savan this should be shared with all.

Ingredients:

  1. 1 cup atta
  2. 200 gms gur
  3. 1 1/2 glass of water
  4. 1 tsp saunf

Method:

  1. Soak gur(jaggery) overnight.
  2. Next day melt gur in water.
  3. Add wheat and saunf and mix well to form a thin consistency(something like beaten eggs or a pancake mixture).
  4. Heat oil in a non-stick pan. Oil should be enough so that the paste should not stick to the pan.
  5. Spread the paste on the non-stick pan as you would do for making an omlette or a pancake.
  6. Flip side when one side is slightly cooked. You will get about 6 to 8 pudas.
  7. Serve with Kheer.

Note:

  1. If gur is not available you can use sugar too though I prefer Gur.
  2. Quantity of sugar and gur varies according to your personal taste.
